Vegetarian Oat Burgers

Chewy and redolent of fresh parsley, these burgers are very tasty and high in protein and fiber. They are quick to make—basically, soaked oats mixed with whipped eggs—and look like oatmeal cookies. You can replace the parsley with other fresh herbs, such as cilantro or chives or a combination thereof. They are delicious served warm with ketchup or chipotle mayo, over a kale salad or with mashed potatoes, and accompanied with pickles. You can also just pop them in your mouth—like cookies!

  1. Makes 8 patties
  2. 2 cups rolled oats
  3. 1 cup cold water
  4. 3 eggs
  5. ¼ cup fresh parsley, finely chopped
  6. 2 garlic cloves, minced
  7. 1 tablespoon salt
  8. Black pepper, freshly ground

Preheat the oven to 375 degrees and line a baking sheet with parchment paper. Spray it lightly with vegetable or olive oil.

Pour the water evenly over the oats and let soak for one hour.

In a separate bowl, beat the eggs and stir in the parsley, garlic, salt and black pepper to taste. Add to the soaked oats and mix thoroughly.

Using a ¼-cup scoop as a measure, drop the burger mix onto the baking sheet, about 3 inches apart. Flatten the top with your hand to form 1-inch-high patties.

Bake for 20 minutes, until golden brown and just firm to the touch.
