    Flour, grated Jarlsberg cheese and softened butter

    Split the dough in half

    On a floured surface, roll out each half of the dough to a rectangle 1/8 inch thick.

    Brush the top of the dough with the egg, and sprinkle with sesame and poppy seeds. Cut it into squares or rectangles.

Poppy Seed-Sesame Cheese Crackers

Serve these irresistible crackers with gin-and-tonics, and watch them disappear faster than you can say, “Dinner is served.” Flaky, buttery, and scattered with poppy and sesame seeds, they are very easy to make. You basically use only three ingredients—flour, butter and cheese—working them into a simple dough. A kid could do it. Actually, your kid should do it for you!

  1. Makes about 45 crackers
  2. 2 cups unbleached all-purpose flour
  3. 2½ cups Jarlsberg cheese, freshly grated
  4. 1 teaspoon salt
  5. 1 cup (16 tablespoons) butter, softened
  6. 1 egg, whisked
  7. 1 tablespoon sesame seeds, divided
  8. 1 tablespoon poppy seeds, divided
  9. 1 teaspoon cayenne pepper, divided (optional)

Preheat the oven to 350 degrees, and line a baking sheet with parchment paper.

Mix together the flour, cheese and salt, and with your hands, work in the butter to create the dough. Split the dough in half, press each half into a disk, wrap in plastic, and let rest in the refrigerator for 20 minutes.

On a floured surface, roll out each half of the dough to a rectangle 1/8 inch thick. Brush the top of the dough with the egg, and sprinkle with ½ tablespoon of sesame seeds, ½ tablespoon of poppy seeds, and cayenne pepper (optional). With a sharp knife, cut it into squares or rectangles and transfer to the baking sheet. Repeat with the other half of the dough.

Bake until golden brown and slightly puffed, about 25–30 minutes.

Tip

When rolling out the dough, place a piece of parchment paper or plastic food wrap on top to keep it from sticking to the rolling pin.
