Jalapeño Cheddar Slices

These hors d’oeuvres are made from just four common ingredients—therefore, aim for fresh, organic and the best quality—but they are flavor-packed and totally satisfying: mildly spicy, moist and dense, with a hint of surface crispness. Serve them at your next dinner party, sliced into single-bite portions.

  1. Serves 6–8
  2. 3–4 jalapeño peppers, destemmed, seeded, finely sliced
  3. 1 pound cheddar cheese, coarsely grated
  4. 6 eggs, beaten
  5. 1 tablespoon fresh thyme, finely chopped

Preheat the oven to 350 degrees, and lightly grease an 8x8-inch baking dish with vegetable oil.

Spread the jalapeño peppers over the bottom of the dish. Spread the cheese over the peppers, and pour the eggs all over. Sprinkle with the thyme.

Bake in the oven until set, about 40 minutes. Let cool, and cut into bite-size pieces. Serve at room temperature.
