    Dry-toast the pumpkin and sunflower seeds in a large, heavy skillet over medium-high heat, stirring constantly, until they swell and start to crack, about 5 minutes.

Garlic-Chipotle Pumpkin & Sunflower Seeds

The last time I had my friends over for a taco dinner party, I served these seeds as a snack with margaritas before the main event. They disappeared faster than you can say “guacamole.” Perfectly seasoned with smoky and spicy chipotle pepper, salt and sugar, they are very addictive and ready in under 10 minutes, including prep. You can sprinkle some over a salad, too.

  1. Makes 1 cup
  2. ½ cup pumpkin seeds
  3. ½ cup sunflower seeds
  4. 3 cloves garlic, peeled, minced
  5. 1 teaspoon salt
  6. 1½ teaspoons dried chipotle chili pepper
  7. ½ teaspoon sugar
  8. Lime wedge to serve

Dry-toast the pumpkin and sunflower seeds in a large, heavy skillet over medium-high heat, stirring constantly, until they swell and start to crack, about 5 minutes.

Add the garlic, and mix with the seeds until coated. Stir in the salt, chipotle pepper and sugar, and turn off the heat. Transfer the seeds to a bowl, and serve warm with the lime wedge.
