    Crush the graham crackers

    Melt the butter and chocolate in a heatproof bowl set over a pot with boiling water.

    Stir in the prunes, pecans and graham crackers into the melted chocolate.

    Spread the mixture evenly into the pan and refrigirate for minimum 2 hours.

Chocolate-Pecan-Prune Refrigerator Bars

I no longer remember where this recipe came from—I have only hand-written notes on a piece paper—but it is definitely one of my favorite desserts to make, because it’s fast. You melt a chocolate bar, add things to it, and bring it back to a solid, improved state in the fridge—hence the name.

It’s perfect to serve at a dinner party, when your hands are already full with other dishes, and you don’t want to spend much time making a complicated dessert.

That doesn’t mean it’s not satisfying—quite the opposite. It is an assertive and addictive bar with a nice, crunchy texture and dense, chocolaty flavor. And the brandy adds a welcome, adult taste to it. Serve it cold, straight from the refrigerator.

  1. Makes 20 bars
  2. ¾ cup dried prunes, chopped
  3. ¼ cup brandy
  4. 16 tablespoons unsalted butter
  5. 8 ounces semisweet chocolate, broken into small pieces
  6. 1 cup pecans, roasted and chopped
  7. 8 ounces graham crackers, crushed

Soak the prunes in the brandy for at least one hour. Line an 8x12-inch rimmed pan with parchment paper.

Melt the butter and chocolate in a heatproof bowl set over a pot with boiling water.

Remove the bowl from the heat, and stir in the prunes with the brandy, pecans and graham crackers. Combine well. Spread the mixture evenly into the rimmed pan, and refrigirate for minimum 2 hours. Cut into bars and serve cold.
