Blueberry Ginger Cookies

Blueberry Ginger Cookies

I’m not a fan of raisins at all—except maybe in smoothies, where they completely disappear into the background—but I do like the texture and little bursts of sweet-sour flavor of dried fruit in my baked goods.

Dried blueberries look like precious blue-black jewels, taste great, and mesh splendidly with the dried ginger in this irresistible, easy-to-make, one-bite cookie. And the brown rice flour adds a nice, toasty, almost floral flavor to it.

  1. Yields about 40 cookies
  2. 1½ cups unbleached all-purpose flour
  3. 1/3 cup brown rice flour
  4. ½ teaspoon salt
  5. 1 teaspoon dried ginger
  6. ½ teaspoon baking soda
  7. 8 tablespoons unsalted butter, softened
  8. ¾ cup brown sugar
  9. 1 egg
  10. 1 cup dried blueberries

Preheat the oven to 350 degrees, and line two baking sheets with parchment paper.

Mix the flours, salt, dried ginger and baking soda in a medium bowl.
